For a lot of Moms, the weekend means you’ll have some rest and free time of carelessness.
But for others, just like me... weekends doesn’t ever mean that.
My husband is always working on those days 🤪. Well, I sure do hope not forever 🙋🏼♀️
Weekends just means more times your/my kids are 24h/day on you begging for food every other minute, specially because there’s NO school🤪🤦🏼♀️!
To avoid frustration I have to come up with quick and easy healthy meals to make my days run smooth.
Today I’m posting one of my favorite recipes on my blog and sure hope to help ONE mom out there to feel accomplished 👊🏻

Turkey Cauli-Broccoli Fried Rice 🥦

Ingredients
10 oz bag of frozen cauliflower-broccoli rice
1 cup frozen vegetable medley (sometimes I use carrot, green beans and corn, sometimes I use one can of organic peas, sometimes I just use frozen sliced bell peppers...basically whatever I have in hand 😉)
salt and pepper to taste
2 teaspoons of dash garlic & herb seasoning blend
1 pound lean ground turkey, chicken or beef
3 cloves garlic, minced
2 tablespoons of refined coconut oil, MCT oil or grapeseed oil (divided)
2 beaten eggs
¼ cup coconut aminos, tahini or soy sauce
6 scallions, chopped
Instructions
Bring the frozen cauli-broccoli rice and vegetable of choice to room temperature.
Heat 2 tablespoons of the oil chosen in a large skillet over medium heat. Add the minced garlic, salt and pepper to taste. Cook for about 1 minute then add the ground turkey / beef / chicken and cook for an additional 4-5 minutes smashing the meat with the proper tool or spoon until completely brown.
Add the cauli-broccoli rice and vegetable medley of choice and sprinkle the dash seasoning. Cook until all looks soft.
Turn the heat down to low and make a hole in the middle then add the beaten eggs and stir until the eggs are cooked, then remove from heat.
Stir in the coconut aminos or sauce of choice and scallions.
Sprinkle with shredded cheese or top with sriracha, avocado, sesame seeds/nothing but bagel seasoning, and/or cilantro to serve.
